the fundamental objective of this article is to strengthen the analysis of the food industry competition, a factor that permits a better and greater substitution of imports and insertion of consumer food industry goods in international markets (cfig). for this, a series of internationally accepted indicators were selected for the study of structural competition, adapting it to the internal foreign exchange market, developing a methodology in magnetic support using the language excel language. this permits performing calculations for each selected product and time period, for indicators and their relationship, as well as developing a matrix of the results. the information gathered permitted the evaluation of the competitive performance of ten products and/or groups of products from the cuban food industry, within the framework of the internal market in foreign exchange from 1996 through 2001, in addition to using a particular product for validating the application of the competitiveness indicators selected.
