In this study, two-step enzymatic process (ethanolysis and esterification) mediated with Lipozyme TL IM as the biocatalyst was established to produce medium-long-medium structured triacylglycerols (MLM-STAGs) using anchovy oil and caprylic acid (CA). Results indicated that: In the ethanolysis reaction by Lipozyme TL IM, the highest 2-monoacylglycerols (2-MAGs) yield (around 35%) was obtained in 5%~9% of water content and 32:1 of ethanol to fish oil molar ratio.In the esterification by Lipozyme TL IM, the greatest MLM-STAGs yield (91.84%) was achieved in 2-MAGs to CA molar ratio of 1:3 at 40 ℃ for 24 hours. The final MLM-STAGs mainly contained CA-LSFAs (long chain saturated fatty acid)-CA (22.27%) and CA-PUFAs-CA(44.67%). In all, Lipozyme TL IM was a potential biocatalyst for high-value MLM-STAGs products from fish oil for food, medicine and other fields.
